Midweek Meals the Family Will Love

It’s the middle of the week, everyone is tired, grumpy, and waiting for the weekend. This is how everybody feels on Wednesday! We’re half way to the weekend and counting down the days until we can throw away our important work documents and school uniforms for a few days of frivolous fun and excitement. To help get you through the rest of the week, a good meal can be just what the family needs. Cook them these midweek meals and they won’t count down the days to the weekend ever again!

Beef Meatza

You’ll need:

  • Ground beef.

  • Garlic.

  • Coriander.

  • Onion powder.

  • Herbs and spices of your choice.

  • Salsa.

  • Toppings of your choice.

This is a great alternative to pizza, and so delicious. Simply use your hands to mix together some ground beef, garlic, coriander, onion powder, and any other herbs and spices you like. Spread it out as evenly you can in a pie or baking tin, and bake for 10 minutes.

Once you’ve done that, drain the beef of grease using kitchen roll, and spread some salsa over it, leaving half an inch around the side. You can then top your meatza with anything you like and pop it back in the oven for 15 minutes! Olives, goats cheese, onion, peppers, rocket, and chorizo is a lovely combination.

Lamb Burgers

You’ll Need:

  • Ground lamb mince.

  • Herbs and spices of your choice.

  • Salad.

  • Sweet potato.

For your lamb burgers, mix ground lamb with any herbs and spices you like; dill, garlic, onion powder, and cumin work very well. Shape the meat into equal burger shapes, and then griddle it using a little olive oil, turning the meat as minimally as you possibly can until cooked through. Leave to rest in it’s juices for a few minutes before serving with salad, and perhaps some homemade sweet potato wedges!

Sausage/Beef Casserole

You’ll Need:

  • Sausage or beef.

  • A bag of casserole vegetables.

  • Casserole mix.

  • Tin of tomatoes.

  • Herbs and spices of your choice.

Start off by cooking your sausage or beef until it’s nearly cooked through, and then throw it in a casserole dish. You could also cook some onion and garlic with the meat to add extra flavour. Add a ready made casserole mix, a tin of chopped tomatoes, and any other herbs and spices you think it needs, along with a special casserole mix of vegetables. Cook this in the oven for about an hour for the perfect sausage/beef casserole!

Nandos Chicken with Kale Salad

You’ll Need:

  • Chicken.

  • Nandos rub.

  • Kale.

  • Onion.

  • Garlic.

  • Lemon.

  • Salt and pepper.

Nandos is a yummy treat, but you can make your own tasty Nandos chicken at home by simply using a store bought Nandos rub! Cover your chicken in just enough Nandos rub, then griddle until cooked. As you’re doing this, fry some garlic, onion, and lemon zest in a large pan for a few minutes until soft. Add some kale leaves, wait until wilted then squeeze in lots of fresh lemon juice. Serve the chicken on top of the kale salad with plenty of sea salt and ground black pepper.
