5 Amazing Recipes to Cook for Your Friends

1. Broccoli and Onion Soup

Broccoli and onion soup is very simple to make and makes the perfect starter at a dinner party with friends. Simply fry off some onions until they’re soft in a pan, and then add 4 mugs of reduced salt Bouillon in boiling water. Add 1 large floret or 2 small florets of broccoli, then leave for 10-15 minutes until soft. Leave to cool for 10 minutes, add a handful of mint leaves, and blend together. Sprinkle sea salt and black pepper over the top for extra yumminess (try not to get any on your tablecloths, it could stain!).

2. Banana Omelette

If your friend is coming over for breakfast or brunch, a banana omelette (although it may sound weird to you now) will delight their senses. You won’t believe what a great combination this concoction actually makes! Fry off the banana in a pan until it’s quite soft, then add the amount of eggs you prefer. We like to use one whole egg and 2 egg whites whisked together. Before flipping over, add cinnamon. Add more cinnamon before serving – yum!

3. Lamb Burgers and Sweet Potato Fries

You won’t believe this meal is good for you while you’re eating it, as it’s so delicious! For the sweet potato fries, simply boil your sweet potato until a little softer (not too soft), then cut into chip shapes, toss in some coconut oil on a tray and bake until crispy. For the burgers, use your hands to mix lamb mince with garlic, onion powder, dill, oregano, salt, and pepper. Create 4 equally sized burger patties and cook in a griddle pan over a high heat, flipping only once, until cooked! Serve with salad and salsa, if you wish.

4. Slow Cooker Chilli Con Carne

Slow cooker chilli con carne is the perfect dish to serve to your friends, as all you need is a little prep time in the morning before getting on with your day. Brown off your beef mince in a pan (you can also use turkey if you want a less fatty meat), and then throw in the slow cooker with 2 cans of chopped tomatoes, a large yellow onion, a green pepper, garlic, oregano, cumin, and chilli powder (all to your taste). Serve in a big bowl, with some crusty bread for dipping or with some sweet potato fries on the side!

5. Chorizo and Goats Cheese Meatza

A meatza is the perfect alternative to pizza, and it’s so much better for your health! Mix some lean beef mince with garlic, onion powder, oregano, salt and pepper, then roll into a ball and flatten evenly in a large pan with damp hands. Make sure the base is as even as you can get it and not too thick (it’ll shrink and get thicker). Cook on a med-high heat for 10 minutes in the oven, then take out and dab the excess grease away with some kitchen paper. Spread on some salsa, leaving a 1 inch gap around the edge, and then add your thinly sliced chorizo and goats cheese for the last 10 minutes. You can even add things like olives, rocket, feta cheese, peppers, and onion!
